Kakanin are delicacy usually the main ingredients are rice or glutinous rice and root crops. When it come to the delicacies we have a lot of choices and some of them we prepare it when we have a special occasion like birthday party, baptism, Christmas , New Year and etc.
And here are some of the native delicacy :
1. SUMAN
We have a variety of suman , but the most popular is the suman sa lihiya which is made with glutinous rice with coconut milk, wrapped in banana leaves and then steamed it. When serving the suman is also the best with sprinkle of sugar .
2. PALITAW
One of my personal favorite is made up of sticky rice grind into powede then add with coconut milk and sugar . In cooking method you need to scooped a mixture then soaked to a boiling water when it rise the Palitaw is done . The cooked Palitaw will rolled to the sugar, shredded coconut, and sesame seeds.
3. KUTSINTA
Kutsinta is made up of ground rice with sugar and a little portion of lye or soduim hydroxide to give the texture of jelly and color yellow . It is best to eat when partner with shredded coconut on the top.
4. PUTO
PUTO is made up to steamed rice cake , in our tradition the most common puto is color white but as of now we have many flavored to choose from, Buko pandan, Ube, Strawberry, Melon, and many more . Toppings with cheese give the puto more delicious taste.
5. SAPIN SAPIN
Sapin-sapin is one of the favorite delicacy it is made with coconutmilk, sugar, and sometimes with the flavored of Ube, Langka, or Cheese Flavoring . It cannot forget to the gathering and party. Best pair with Budbod.
6. BIKO
BIKO is the one who can never forget when it comes to the gathering and party this is one of the favorite it is made with malagkit rice with coconut milk and sugar cook like a steamed rice and place to the Bilal and toppings with latik which is made in coconut milk .
